To get a more realistic performance without tweaking numerous controllers you can trigger grace notes in minor and major seconds via velocity.
These can be harmonically matched to the right key of the song via the corresponding keyswitch and are tempo-synced to your DAW.
The modwheel is used to select whether the next grace note will move upwards or downwards.
